Detour: The Food on the Farm in Abiquiu, NM

This is the third in a 3-part series about our time in Abiquiu, NM. Read our entries about The Farm and The Terrain too.

Our post about our getaway to the organic farm and casita in Abiquiu, NM needed its very own entry about the food. Really, it needed it. It deserved it.

It’s a farm. There is food, straight from the earth. Hearty collard greens, curly kale, dinosaur kale, crisp golden apples, luscious tomatoes, fragrant mint and thyme, and vibrant parsley to cleanse the palate.

A post-frost offering, meager in comparison to the harvest season, but still more than enough for a delectable feast to fill the stomach and warm the spirit.

Here are the greens, in a quick sauté with fresh garlic.

I fire up the grill for a ribeye steak we picked up at a Whole Foods in Santa Fe, on the way up to Abiquiu.

Evolution of an Apple Crisp

Here, I introduce you to the making of our apple crisp, from tree branch to tummy.

We spot a cluster of contenders!

“This one is good!”

“Apple is yummy, Dada!”

Hand-peeled with a paring knife. My hands got quite the workout!

The apples are ready for their topping. We followed a recipe by the Barefoot Contessa but used a secret ingredient: steel-cut oatmeal from Trader Joe’s (vs. old-fashioned rolled oats). It gave the topping a crispy-chewy texture that made us swoon.

Whipped cream and a fresh mint garnish complete the masterpiece.

“More please?”

 

In the morning, Max started breakfast out with cereal and the sunrise.

Our hosts Djann and Lisa passed on to us four farm-fresh eggs that they received from the Medanales post office — the attendant there had their own chickens!

Here, I’m making Ang’s eggs over hard.

Nothing beats the taste of fresh eggs.
